DOES ANYONE HAVE THE COOK BOOK “BETTER HOMES AND GARDENS MEXICAN COOK BOOK”?

I consider this prepare book was published in 1977. we am seeking for a Chicken Enchiladas recipe from this book. It’s my sons favorite. His Grandmother have use of to have it as well as I’ve appear to have missplaced a print copied page she had done for me of this recipe. we know we can buy a prepare book upon ebay though I’m perplexing to have this plate upon Thursday for family members which have been entrance in from out of town. we conclude any one which can assistance me with this.

    Yes, I have that book. Here is the recipe.

    Enchiladas de Polo

    1 16 oz can tomatoes
    1 4 oz can green chili peppers rinsed and seeded
    1/2 tsp coriander seed
    1/2 tsp salt
    1 c sour cream
    2 c finely chopped cooked chicken
    1 3 oz package of cream cheese
    1/4 c shopped onion
    3/4 tsp salt
    2 tbsp cooking oil
    12 6″ tortillas
    1 c shredded Monterey jack cheese

    Combine first four ingredients in blender, blend, then add sour cream, blend and set aside.

    Combine chicken, cream cheese, onion and 3/4 tsp salt. In skillet heat cooking oil. Dip tortillas, one at a time into oil for 10 seconds or till limp. Drain in paper towel. Spoon chicken mixture on tortillas, roll, then place seam side down in baking dish. Pour tomato mixture over top. Cover and bake 350 for 30 mins. Remove foil, sprinkle cheese, then return to over until it’s melted.

    wow….believe it or not I think my mom may have it at home. I’m at work now but since people can edit their answers on here I will post it later when I get home….if we do in fact have the cookbook. =0)

    I have that cookbook and cant seem to find it! Here are some enchilada recipes from the website, maybe one of them is the right one.
